Hoy pensaba hacer el pan con sidra, como le había dicho a Chefi pero he cambiado de idea y he elaborado éste de calabaza (la sidra no se estropea ) que también tenía en mente hace días.
Me ha costado amasarlo (es un pan muy grande ) y la calabaza suelta algo de agua pues va cocida, pero el resultado ha sido bueno y ha merecido la pena.
Es una receta original mía, ya sabéis que me encantan las probaturas y no me importa arriesgarme. Espero que a vosotros también os guste .

- 680g. harina ( 200g. de harina de ESPELTA ASTURIANA , 300 g. de harina de fuerza , 125 g. de harina integral,55 g. de harina de centeno integral)
- 300ml agua (la de haber cocido la calabaza) tibia
- 300g. calabaza roja cocida
- 3 cdas aceite de oliva virgen
- 1 cda rasa de sal
- 1 cdts azúcar (yo, edulcorante)
- 1 envase de levadura fresca Levital
- 135g. levadura madre líquida
- ralladura de jengibre fresco
- 2 clavos molidos
- 1 cdts canela molida

- En un bol mezclamos la harina con la levadura fresca que desmenuzaremos con las manos , mezclándola con la harina. Por los lados externos de la harina añadimos la sal.

- Seguidamente hacemos un volcán y colocamos en el centro el agua de cocer la calabaza,el aceite, el azúcar , las especias y removemos con cuidado con la lengueta de silicona.
- Añadimos entonces la levadura madre y la calabaza cocida y batida.Vamos integrando despacio todos los ingredientes hasta que se mezclen bien. Sobre la encimera ya trabajamos la masa hasta que se quede suave y manejable, hacemos nuestra bola y dejamos levar en horno apagado durante 1 hora y 1/2.
- La sacamos del horno y sobre la encimera la desgasificamos y la voleamos volviéndola a introducir en horno apagado, tapada durante 1/2 hora más.

- Sacamos de nuevo, precalentamos el horno a 220ºC e introducimos recipiente con agua en la base, pulverizamos las paredes también con agua e introducimos la masa del pan durante 50 minutos. (Taparemos con un alumnio si se dora demasiado) y dejamos enfriar en rejilla.
